Happy Hormones Carrot Salad

Ingredients

  • 3 full carrots, peeled

  • 1 tbsp fresh, minced ginger

  • 2 tbsp soy sauce

  • 2 tbsp rice vinegar

  • 1 clove of garlic

  • A couple glugs of @acidleague Garden Heat Vinegar

  • 1 tbsp chili oil or gochujang

  • 3 tsp sesame oil

  • A handful of fresh green onion

  • A pinch of sesame seeds

  • Cilantro, for garnish

Directions

  1. Add your peeled carrots to a bowl

  2. In a small bowl, whisk together the ginger, soy sauce, rice vinegar, garlic, garden Heat Vinegar, chili oil and sesame oil.

  3. Pour dressing over the top of the carrots, toss to combine. Then garnish with green onion, sesame seeds and cilantro. !

Note:

This will keep in the fridge for a few days – it pairs deliciously with salmon or tofu and rice.
