Summer Salad in a Jar

Ingredients:

For the Salad:

  • 3-4 medium heirloom tomatoes, sliced

  • 3 ears corn, boiled or steamed

  • ¼ cup basil, torn

For the Vinaigrette:

  • 1 bunch scallions greens

  • 1 tbsp champagne vinegar

  • 1 tbsp lemon juice

  • ¼ cup extra virgin olive oil

Directions

  1. Grill the scallion greens and corn until charred in some spots.

  2. Cut the kernels from the corn, season with salt and pepper and set aside.

  3. Finely chop the scallion greens and set in a small bowl to make the vinaigrette.

  4. Combine the scallion greens, champagne vinegar, and lemon juice. Whisk in the olive oil until emulsified.

  5. Season the sliced tomatoes with salt and pepper.

  6. To put together, in a glass jar alternate layering the tomatoes, corn, basil and scallion vinaigrette, then throw in your lunchbox or in the fridge for when you’re ready to eat!
