Snickers Date Balls

Ingredients

For theDate Balls: 

  • 30 dates

  • 2 cups rolled oats 

  • 1/2 cup peanut butter

  • 1 scoop Ascent 100% Whey Vanilla Protein

  • 1/4 cup maple syrup

  • 1/2 cup salted peanuts, divided 

For the topping:

  • 4oz dark chocolate chips 

  • 2 tsp coconut oil 

  • Flaky sea salt 

Snickers Date Balls 

  1. Add all ingredients to a food processor fitted with the S-shaped blade, reserving 1/4 cup of the peanuts for the topping. Process until mixture is well combined and sticking together. The dough should be soft but not too sticky. If it's too wet, add in 1-2 tablespoons of oats then pulse again. 

  2. Scoop mixture from food processor with your hands (or a cookie scoop) and form into small balls using your hands and place on a baking sheet lined with parchment paper.

  3. Place the chocolate and coconut oil into a microwave-safe bowl and microwave on high for 20-second increments until melted. Stir the chocolate after each increment. 

  4. Chop the remaining peanuts into small pieces set aside. 

  5. Drizzle each ball with a small amount of chocolate then sprinkle with peanuts and flaky salt. 

  6. Set the balls on a plate and transfer them to the freezer for 20 minutes or until the chocolate as set. 

  7. Place balls into a sealed storage container and store in the fridge for 1-2 weeks or the freezer for up to 3 months.
