Crunchy Cheesy Tuna Bites

Ingredients

2 cans albacore tuna 
1 egg 
1/2 cup mashed potato
1/3 cup shredded cheddar cheese
Salt and pepper to taste 
1 teaspoon onion powder
1 teaspoon dried dill 
1/2 cup panko bread crumbs
Avocado oil for frying 

Directions 

  1. To a bowl, add the tuna, egg, mashed potato, cheese, and spices. Mix well to combine give it a good pick.

  2. Line a baking sheet with parchment paper.

  3. Using a measuring cup or spoon, create 14-15 equal-sized tuna bites from the mixture. 

  4. Add panko breadcrumbs to a bowl, coat each tuna bite generously with the crumbs and place them onto the parchment paper.

  5. To a large pan, add about a 1/2 inch of avocado oil and get it hot on medium heat.

  6. Gently place the tuna bites in the hot oil. Fry on each side for about 3-4 minutes, or until golden, brown, and crunchy. Avoid turning them around too much. Be gentle when flipping. Pair these with ketchup, or tartar sauce.

  7. Store in the fridge for up to three days. Heat them as needed but they're also good cold!
